Slow Chili Con Queso 1 md Onion -- chopped fine
2 Cloves garlic -- minced
2 tb Butter or margarine
8 Green chiles -- chopped
3 c Grated Cheddar -- or Colby
2 c Grated Jack
3/4 c Milk
Chopped green onion -- for garnish
Sauté onion and garlic in butter until soft. Add green chiles and cook about5 more minutes. Turn heat to low. Stir in small amounts of cheese and milk at a time, stirring until melted after each addition. Garnish with green onions. Serve with tortilla chips.
